After a 32-hour maceration, it fermented with indigenous yeasts in demi-muid, where it matured for 13 months in a deep cave. 2019 was a warmer and riper year. The wines are more powerful (even if harvested earlier), and there is a strong imprint from the �levage here, with intense balsamic aromas, hints of smoke and spices, lees and toasted bread. It has a more Burgundian profile, a rounder palate and a softer mouthfeel. It should develop in the bottle and integrate with the oak a little more.
