From sloping vineyards around B�ziers, the southwestern community in France�s Languedoc-Roussillon region, this light pink bottle features pretty floral aromas, with notes of watermelon, raspberry and pear. The grapes for this wine are hand-harvested and fermented individually with native yeasts before being blended for the final wine. The palate is intriguing, with a definite salty tang balanced by soft fruit flavours of pear, orange, tangerine and a bit of cedar. It is both refreshing and interesting. It is dedicated to Sophie Valrose, a female vineyard worker who, in the 19th century, fought to improve the working conditions for the many women employed in the vineyards.Steelhead trout, pork or shrimp would be great matches.�
